    Acacia honey is derived from the nectar of the Robinia pseudoacacia flower, commonly known as the black locust or the false acacia tree, which is native to North America and Europe as it grows in subtropical and tropical climates. These trees belong to Fabaceae family, so they fix nitrogen into the soil, which makes it a great choice for damaged or poor soils. They grow to an average height of 5-10 meters, have large crowns and long branches, which provide a very intense smell. Their flowers can vary depending on the species, but they are usually yellow or white.

    The Robinia pseudoacacia flower, also known as the black locus or the false acacia tree, is native to North America, but it is also found a lot across Europe where it is commonly planted as an ornament and for stabilizing dry soil. It is specifically found in the mountain areas of Greece.

    Black locust trees also do not always produce honey every year as it depends on weather conditions. Even when the nectar flow is good, the bloom period is only about 10 days between the months of May and June. This makes Acacia honey highly popular and means it is usually more expensive than traditional types of honey. The honey is harvested in spring when the bees have already collected the pollen and made the honey.
