Whilst there are a few species of trees that are used to create the rich Honeydew Honey in New Zealand, the most common variety is the Black Beech tree, which is native to the dense forests of the South Island.

Many think that honey is solely created by the hardworking honeybees, however the truth is that honeybees are not the only insect involved in the creation of honeydew honey – aphids also play a role too. The process is started by aphids who consume the sweet sticky sap from the black beech tree (from the bark and leaves), and then the honeybee comes and takes those sweet secretions that the aphids make and turn it into the delicious honeydew honey using their normal honey process. This is different to normal honey production which is where the bees feed directly on the nectar of a plant and then process that into honey, so it makes honeydew honey particularly special.
Honeydew Honey is not a floral honey, its richer and darker in colour with a similar taste to golden syrup. In contrast to regular honey, honeydew honey rarely crystallises due to how it is made.
Honeydew Honey contains complex sugars called Oligosaccharides which have a higher level of antioxidants compared to other floral honeys. Oligosaccharides easily transit through the stomach and have a unique effect on our good bacteria, that helps to keep a healthy balance in our digestion systems. This helps to keep the digestive tract running optimally and helps to lessen and reduce the impact of colitis and other bowel conditions.
